From the Val Taleggio in Lombardy, Italy, Taleggio is a soft-ripened washed rind cheese. After arrival, our affinuer resuscitates each square of Taleggio by hand washing the rind twice per day for the first week. After three additional weeks in our 97% humidity cheese cave, our Taleggio arrives at it full potential. It is characteristically aromatic and full in flavor. Some would say it stinks, but we think it smells delicious. Serve at room temperature for a potent table cheese or melt into risotto or polenta and pair with everything.
